Apple Cinnamon Granola

Do you like granola? I’m going to be completely honest with you, I’m more into smoothies for breakfast but Darko is a huge granola lover. Having that in mind I was thinking of surprising him and making him a super cozy one – Apple Cinnamon Granola.

I knew that he loves nuts, dried fruits, and sweet spices so I used his favorite nuts (almonds and hazelnuts) for some extra crunchiness. Besides that I found organic apple chips made of just 100% apples. But to make the apple flavor richer I used apple sauce, spiced it with some cinnamon, and created the best granola ever! All I can say is that he is not the only one enjoying it…if you know what I mean :D.  
Apple Cinnamon Granola
This recipe is 100% vegan, gluten-free, and dairy-free! It’s naturally sweetened using maple syrup (honey can be used too) instead of refined sugar! Feel free to try different nuts in this granola recipe. For us these two (hazelnuts and almonds) were the best choice. The recipe would be as delicious as it is now if you are using walnuts, pecans, brazil nuts etc. instead.

Vegan Apple Cinnamon Granola

INGREDIENTS

  • 2 3/4 cups (about 250g) whole rolled oats
  • 1 cup (150g) raw almonds
  • 1 1/6 cup (100g) raw hazelnuts
  • 5-6 tablespoons apple sauce
  • 2 tablespoons coconut oil (room temperature)
  • 1 tablespoon cinnamon
  • 4 tablespoons maple syrup
  • 1.4 oz (around 40g) dried apple slices

INSTRUCTIONS

  • Preheat the oven to 300 degrees Fahrenheit (150 °C). Line a large baking sheet with a parchment paper. Set aside.
  • Roughly chop almond and hazelnuts. Use food processor for faster results.
  • In a large bowl mix together coconut oil, maple syrup, apple sauce, and cinnamon until combined. NOTE: Add more maple syrup if you want sweeter granola!
  • Add oats, chopped almonds, and chopped hazelnuts into the bowl with the wet ingredients. Use spatula to mix well and toss to coat. The mixture will be mild sticky.
  • Spread the mixture in a thin layer on a baking sheet. Bake for 20 minutes stirring halfway through. When done add dried apple slices and toss everything.
  • Let it cool completely before transferring in an airtight storage container. Store it for up to 2-3 weeks. Enjoy your homemade Apple Cinnamon Granola Recipe!
