Blackberry Coconut Chia Pudding
Here is one more recipe from our chia pudding series. If you liked Chocolate Chia Pudding and Blueberry Chia Pudding you’ll absolutely like this Blackberry Coconut Chia Pudding too. This time I decided to try with blackberries and coconut. Beside cacao nibs, coconut is my favorite topping ingredient – I add it to all of my smoothie bowl or pudding recipes.
Blackberry Coconut Chia Pudding has amazing flavor – a fruity blackberry taste and crunchy coconut are a promising combination for a delicious breakfast, don’t you think?
Blackberries are beside blueberries my favorite berries, but only if they are sweet :). They taste absolutely amazing. If you decide to make this recipe try to find soft sweet blackberries, and you can reduce the amount of maple syrup to 1/2 teaspoon. I, personally, like this recipe sweeter this is why I added 1 whole teaspoon.

This recipe is great for vegans because it’s 100% vegan, gluten-free, and dairy-free.
Prep time: 2 – 8 h Cook time: 4 min Total: 2 – 8 h 4 min Servings: 1
INGREDIENTS
- 2 tablespoons chia seeds
- 1 tablespoon shredded coconut
- 2.1 oz (60g) fresh blackberries
- 1 teaspoon maple syrup (or another liquid sweetener)
- approx 4.1 fl oz (120ml) of unsweetened non-dairy milk (I used oat milk)
TOPPING
- coconut flakes
- 1-2 fresh blueberries
INSTRUCTIONS
- Add blackberries and non-dairy milk into a blender and blend on high until smooth. Set aside. In a small mason jar (or a small glass) add chia seeds, shredded coconut, maple syrup, and blended mixture. Stir together until combined. Tighten lid (or cover with plastic wrap). Place chia pudding in the fridge for at least 2 hours or overnight (better).
- Before serving add coconut flakes and blackberries on top of the chia pudding.

NOTES
- This is a serving for one person. For the best results prepare the pudding before going to sleep. Let it stay in the fridge overnight, you’ll save yourself time in the morning and the texture of the pudding will be amazing.
