Cabbage Carrot Slaw Salad
Cabbage Carrot Slaw Salad is a perfect quick & easy summer salad. We modified the original coleslaw recipe, removed mayonnaise, and created the most delicious refreshing vegan salad.
The inspiration for this recipe came from my father, he makes the best cabbage salad in the world! I recently visited my parents, and while been there I enjoyed this salad so much. Of course, Darko and I added our personal touch to it, and created something you are going to love!
The salad is 100% vegan, gluten-free, and dairy-free. It’s so easy to make, perfect for beginners, and everyone looking for a budget-friendly salad. All the ingredients are currently in season and are very cheap to get.

INGREDIENTS
- 2 cups (140 g) shredded cabbage
- 1 medium-size carrot
- 1 spring onion
DRESSING
- 1 tablespoon of flaxseed oil
- 2 tablespoons apple cider vinegar
- salt and pepper to taste
INSTRUCTIONS
- Prepare all the ingredients. Chop the spring onion. Thinly slice the cabbage into strips. If you have a mandoline slicer use it to cut the carrot. If not, you can use a peeler, as we did, to quickly slice it into very thin strips.
- To make the dressing add all the dressing ingredients into a small bowl and mix them until combined. Set aside.
- In a large bowl add all the salad ingredients. Pour dressing over it. Toss everything together until combined.
