Cashew Chocolate Mousse Recipe

Vegan Cashew Chocolate Mousse
Prep time: 2 – 8 h   Cook time: 5 min   Total: 2 – 8 h 5 min   Servings: 2




 

 

INGREDIENTS

  • 1 cups (140 g) raw cashews
  • 3 tablespoons cacao powder
  • 3 tablespoons coconut syrup (or other liquid sweetener)
  • 1/4 cup (60 ml) non-dairy milk (we used almond milk)
  • 4 cups of water (to soak cashews)

TOPPING INGREDIENTS (Optional)

  • vegan whipped cream
  • 1/4 teaspoon cinnamon or cacao powder

INSTRUCTIONS

  • Soak the cashews in 4 cups of water for at least 2 hours. We left ours overnight. When done, drain and rinse the cashews.
  • Into a food processor (or high speed blender) add drained cashews, 1/4 cup non-dairy milk, cacao powder, and coconut syrup. Process until smooth and creamy. Add more almond milk if necessary, depending on the thickness, but make sure to add a tablespoon at a time until you reach the your desired consistency.
  • Transfer the mixture to a prepared glass or another dish. Add whipped cream and sprinkle with some cinnamon or cacao powder on top (optional). 
  • Serve your Cashew Chocolate Mousse Recipe right away or refrigerate it for at least 30 minutes and enjoy the chilled version of the recipe!
