Cauliflower Rice with Adzuki Beans
Cauliflower was always my least favorite vegetable! Not sure if it is the smell, but somehow I never liked it. Ever since I started eating healthier, I started incorporating cauliflower into my meals, first in smoothies, then in salads, and then I figure out that it can be used instead of regular rice! This is how this amazing Cauliflower Rice with Adzuki Beans recipe came up.
For some people rice can be hard for the stomach, especially the white rice! The healthiest alternative to traditional white rice is definitely the cauliflower rice. It’s cooks way faster, it’s healthier, it’s good for your gut, and in our opinion it tastes amazing! 🙂

INGREDIENTS
- 1/2 medium size cauliflower
- 1 large carrot
- 2/3 cup (about 100 g) peas (frozen or fresh)
- 1 small red onion (chopped)
- 1/2 cup (about 120 g) cooked adzuki beans
- 1 tablespoon olive oil
- pinch of salt
- 1/2 teaspoon of black pepper
INSTRUCTIONS
- How to make cauliflower rice: Cut cauliflower into smaller florets. Add them into food processor and pulse until it resembles rice, for about 2 minutes. Set aside
- In a large pan add olive oil, chopped onions, and carrot, and cook on medium until onions become translucent. Add salt, pepper and peas, and cook for about 5 minutes on medium stirring constantly. Then add cauliflower rice and cook until it becomes tender (still stirring constantly).
- Add adzuki beans at the and and cook for another minute or so. When done, remove from the heat.
- Let it cool for about 5 minutes before serving. Enjoy your Cauliflower Rice with Adzuki Beans!
