Chocolate Wafer Cake – Traditional Balkan Dessert

We decided to introduce you with a traditional Balkan dessert – Chocolate Wafer Cake, something both of us really love to make. A fast cake recipe which is always gone before the end of the day :). 
Chocolate Wafer Cake
This recipe is not for vegans, it contains dairy. My sweetheart showed me this recipe several years ago, it’s one of his favorites, and since then we are making it at least once per month.




 

Wafer cake has soft and rich – nutty and chocolate flavor from the filling – and amazingly crunchy texture from the wafer sheets. Absolutely the best wafer cake recipe!
Best Chocolate Wafer Cake
What we love the most is that this recipe doesn’t require any advance cooking skills, it’s extremely easy to make, just add most of the ingredients into a pot, cook for about 20 minutes and then add the rest of them until you reach the texture you can see on the photo below. The only thing you should be careful with is not to break the wafer sheets.

Chocolate Wafer Cake Filling
Prep time: 1 h   Cook time: 20-25 min   Chill time: 2 h    Total: 3 h 20-25 min   Servings: 12




 

 

INGREDIENTS

  • 10 fl oz (300ml) regular milk
  • 10.5 oz (300g) sugar
  • 7 oz (200g) semisweet chocolate
  • 7 oz (200g) unsweetened butter
  • 10.5 oz (300g) ground graham crackers
  • 20 tablespoons (120g) ground walnuts
  • 3.5 oz (100g) shredded coconut
  • 3.5 oz (100g) raisins
  • 1 pack of wafer sheets (5 sheets included around size 16 x 13)

INSTRUCTIONS

  • In a medium-size pot add milk, sugar, butter, and chocolate. Put over medium heat and bring to boil while stirring constantly. After 15, add raisins. Cook for 5 more minutes. (Cooking time in total: 20 minutes). Remove from heat.
  • When done, add graham crackers, ground walnuts, and coconut. Stir everything until evenly combined. Let it cool on room temperature for about 30 minutes.
  • Divide the filling into 4 portions.  
  • Take the wafer sheets out from the package. Lay the first sheet on a clean desk or any convenient surface, and add the first portion of the filling spreading it evenly over the sheet until it covers it completely. Then gently press with next sheet and repeat the process until no sheets left. Be careful not to break them. When done add the last sheet on top of it. Cover with plastic wrap and put something heavy over the entire top of the wafer cake. The object should be heavy enough to firm it up. Let the water sit for at least 2 hours.
  • Serve and enjoy your delicious Chocolate Wafer Cake!
