Great liquid vegan substitute for honey is definitely maple syrup :). If you end up making these amazing pancakes vegan, let us know how they turned out!

- 1 teaspoon coconut oil

INSTRUCTIONS
- To make a pancake batter add coconut flour, oat flour, shredded coconut, egg, honey, and coconut milk into a blender and blend on high until smooth. Let the mixture sit in the blender for about 4-5 minutes, until it thickens a bit. Blend again for a few seconds
- Grease the pan with coconut oil. Heat it over medium to high heat. Pour the batter into the pan to form the pancake shape. You might need to use a spoon to flatten them because the batter is thick.
- Cook each pancake for about 2 minutes, or until the bubbles start to form, then flip it over and cook for another minute.
- Serve and eat the way you like. We put coconut yogurt and raspberries on top.
NOTES
