Coconut Pancakes Recipe

Today’s recipe is going to be something that most of us love eating for breakfast! If you are bored by making the same pancakes over and over again and you are craving for something new, you are in the right place. Our healthy Coconut Pancakes are amazingly delicious, fluffy, and beginners friendly.

No baking skills are required, just add all the ingredients into a blender and there you go. These Coconut Pancakes are low in sugars, gluten-free, dairy-free, and full of healthy nutrients. They freeze well and can stay in the fridge for about 4-5 day without being spoiled.
Coconut Pancakes
To make this recipe vegan, use flax egg instead of the regular egg! To make a flax egg, add 1 tablespoon of flaxseed meal and 3 tablespoons of water and let it sit for at least 5 minutes. Great liquid vegan substitute for honey is definitely maple syrup :). If you end up making these amazing pancakes vegan, let us know how they turned out!

INGREDIENTS

  • 8 tablespoons oat flour
  • 2 tablespoons coconut flour
  • 2 tablespoons shredded coconut
  • 1 egg
  • 1 tablespoon honey
  • about 5.1 fl oz (150 ml) coconut milk
  • 1 teaspoon coconut oil

TOPPING Ingredients

  • raspberries
  • coconut yogurt (vegan)

INSTRUCTIONS

  • To make a pancake batter add coconut flour, oat flour, shredded coconut, egg, honey, and coconut milk into a blender and blend on high until smooth. Let the mixture sit in the blender for about 4-5 minutes, until it thickens a bit. Blend again for a few seconds
  • Grease the pan with coconut oil. Heat it over medium to high heat. Pour the batter into the pan to form the pancake shape. You might need to use a spoon to flatten them because the batter is thick.
  • Cook each pancake for about 2 minutes, or until the bubbles start to form, then flip it over and cook for another minute. 
  • Serve and eat the way you like. We put coconut yogurt and raspberries on top.

NOTES

  • We got 6 Coconut Pancakes from this mixture.
