Coconut and Passion Fruit Chia Pudding
With the temperatures above 30°C (90°F), the last thing you want to do in the morning is to spend a lot of time in kitchen. Having that in mind we’ve prepared a super refreshing, make a head breakfast, Coconut and Passion Fruit Chia Pudding, that is an absolute must-try for these hot summer days!
In our opinion the best breakfast for this time of year is smoothie or a chia pudding. Both won’t take you a lot of time to make and would be easy for your gut.
To make this awesome chia pudding you’ll need chia seeds, coconut yogurt, and passion fruit! We haven’t used any sweetener, but to sweeten it up you can add one teaspoon of maple syrup or any other liquid sweetener of your choice. The best is to make these puddings before going to bed, it’s easier and you’ll have your breakfast ready for tomorrow! 😉

INGREDIENTS
- 2.5 tablespoons chia seeds
- 1 teaspoon maple syrup (or honey if not vegan) – OPTIONAL
- 5-6 tablespoons coconut yogurt
- 1 passion fruit
TOPPING
- coconut flakes – OPIONAL
INSTRUCTIONS
- Add coconut yogurt, maple syrup (optional), and chia seeds in a small mason jar (or a small glass). Stir together until combined. Tighten lid (or cover with plastic wrap). Place chia pudding in the fridge for at least 2 hours or overnight (better).
- Add passion fruit pulp and coconut flakes.
- Enjoy your Coconut and Passion Fruit Chia Pudding!
NOTES
- The texture is thicker and more flavorful if it stays for about 6-8 hours in the fridge – overnight.
