Delicious Zucchini Fritters

Hello Everyone, are you ready for the extremely easy and amazingly delicious recipe? 🙂 Basically no cooking skills are required. It’s perfect for beginners, it’s budget-friendly, and is a great meal for students. On today’s menu, we have Delicious Zucchini Fritters.

This simple recipe is great as a quick snack, a side dish to basically any meal, or even as a main dish. When it comes to the ingredients, we kept things very simple. But if you want to you can add bell peppers, carrot, or other vegetables of your choice.Zucchini Fritters
Since we are trying to avoid gluten as much as we can, we used quinoa flour in this recipe. It’s great source of protein, which makes these zucchini fritters very satisfying.

INGREDIENTS

  • 3 1/2 cup shredded zucchini (1 large zucchini)
  • 2 eggs
  • 1 small onion (chopped)
  • 1/2 cup quinoa flour
  • salt and pepper to taste
  • 3-4 tablespoons olive oil

INSTRUCTIONS

  • After shredding zucchini, transfer it into a clean towel, and squeeze out to remove water. If you skip this part Fritters will be too watery and won’t taste the same. 
  • Add zucchini, eggs, chopped onions, quinoa flour, and spices. Stir everything until evenly combined.
  • Add olive oil into a pan and put it over medium heat. Use your hands to form patties, they won’t be very thick (that is ok they’ll thicken while cooking) and add them into a heated pan. Or simply use a spoon and pour the mixture directly into a pan by forming patties directly in there, it’s less messy.
  • Cook the fritters until they are golden brown, about 2-3 minutes then flip them and cook for another 2 minutes. 
  • When they are done, transfer them on a paper towel. Let them cool for about 5 minutes. 
  • Serve and enjoy your Zucchini Fritters the way you like!

  • We got 7 Zucchini Fritters from this mixture.
