Vegan Chocolate Dipped Christmas Cookies

Christmas is coming! Do you like the Holiday spirit? If you do, then you cannot imagine it without Christmas cookies!
These vegan chocolate dipped Christmas cookies are the must bake for all of you who are vegan, or, you simply enjoy plant-based food like me. 🙂




 

This recipe is 100% vegan, gluten-free, and dairy-free.

Vegan Chocolate Dipped Christmas Cookies
Prep time: 2 h 30 min   Cook time: 10 min   Total: 2 h 40 min   Servings: 10




 

 

INGREDIENTS

  • 1/4 cup of coconut oil
  • 1/2 cup of brown sugar
  • 1 flax egg (1 tablespoon of ground flax seed and 3 tablespoons of water)
  • 3/4 cup of gluten-free flour (I used oat flour)
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1 teaspoon of cinnamon
  • a pinch of ground nutmeg

Chocolate Dip

  • 1/3 cup of chocolate chips
  • 1 tablespoon of coconut oil

Icing

  • 1/3 cup of powdered sugar
  • 1/2 tablespoon of water

INSTRUCTIONS

  • Beat together the coconut oil and sugar. Add the flax add and mix until smooth.
  • Add all the dry ingredients and mix until the dough starts to form. If the mixture is too dry add one tablespoon of water or almond milk at a time. Cover and refrigerate for at least 2 hours.
  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  • Line a flat surface with parchment paper, sprinkle with a little flour. Turn the chilled dough onto the surface.
  • Knead the dough gently with your hands until it’s pliable, then roll the dough to ¼” thick and cut out with cookie cutters. Transfer the cut cookies to the baking sheet. Repeat with the rest of the dough until you use all of it.
  • Bake the cookies for 9 – 11 minutes until they’re nicely golden brown. Set them aside.
  • Melt the chocolate and coconut oil over a double boiler until completely smooth.
  • Using forks (or other tools you have), dip a cookie in the chocolate until the top of the cookies is completely covered. Place it onto a baking sheet lined with parchment paper. Repeat until all of the cookies are dipped. Refrigerate for at least 30 minutes.
  • When the vegan chocolate dipped Christmas cookies are completely cooled, whisk together the icing ingredients, pour into a piping bag and pipe onto the cookies! Try to be creative 🙂
