Pan Fried Zucchini
Hello Everyone! Today we are sharing with you one easy and absolutely delicious side dish recipe you must try! Pan Fried Zucchini is our favorite fried food. We are not a huge fan of fried meals, as you can see from our blog, but this recipe is, as we call it, the healthiest fried recipe ever!
Eating fried food is not a bad thing as long as you use the right ingredients and you are not eating it every day. 🙂 Zucchini is one favorite vegetable to fry, the fried slices are so delicious, soft, and goes perfectly with meat or fish, or even other vegetables.
If you are not into using flour, or you are allergic to gluten, you can even skip that part. The texture is not going to be the same but it will be as tasteful as with flour. When it comes gluten-free flour alternatives, the best choice is quinoa flour.

INGREDIENTS
- 2 medium zucchini
- 2 small eggs
- 1/2 cup all-purpose flour
- 1 1/2 cup bread crumbsÂ
- olive oil for frying
- salt and pepper (per taste – optional)
INSTRUCTIONS
- Remove stem ends from zucchini, then slice each zucchini into 1/10 inch thin slices (about 2 millimeters). Set aside.
- In a shallow plate beat eggs and spices (salt and pepper are optional). Prepare two more plates, fill one with flour and one with bread crumbs. Â
- Add olive oil into a large pan (to come up the sides at least 1/10 inch), and put over medium to high heat. Meanwhile, prepare zucchini for frying. Coat each slice into flour, then dip into eggs, and at the end coat into bread crumbs. Repeat the process until no zucchini slices are left.
- Fry each slice 2-3 minutes each side. Add more olive oil during the process. When the zucchini slice is ready, transfer it to a plate with paper towels. They will absorb some extra oil.
