Homemade Oatmeal Fig Bars

We finally manage to find some nice fresh ones for a recipe we were wanting to make for a long time. Homemade Oatmeal Fig Bars are great for breakfast or as a healthy snack/dessert.
Figs have so many benefits such as promoting digestive health, they are rich in antioxidants, and they support healthy blood pressure and bone health. Besides that they are good source of calcium and potassium. If you haven’t already, start incorporating them into your diet.
Our Homemade Oatmeal Fig Bars are soft and rich in flavor, healthy and super delicious and most of all they are vegan, gluten-free, and dairy free. In our opinion these bars are way better then store brought ones!

INGREDIENTS FOR FIG LAYER
- 15.9oz (about 450g) fresh figs (chopped)
- 2 tablespoons maple syrup
- juice of 1/2 medium size lemon
INGREDIENTS FOR CRUST
- 1 1/2 cup (about 140g) whole rolled oats
- 2/3 cup (75g) almond flour
- 2 teaspoons cornstarch
- 1/4 cup (about 50g) coconut sugar
- 1/3 cup (80ml) coconut oil (room temperature – melt if solid)
- pinch of salt
- 1/2 teaspoon baking soda
- 3 tablespoons maple syrup
- 1/2 teaspoon cinnamon
INSTRUCTIONS
- Preheat the oven to 320 degrees Fahrenheit (160 °C). Line a small baking dish (8” square) with a parchment paper. Set aside.
- Chop figs into smaller pieces. In a medium size pan add chopped figs and maple syrup. Cook on medium to low heat for about 20 minutes. Stir occasionally, don’t let them burn. If the mixture sticks to the side add 1-2 tablespoons of water. It’s done when figs are cooked and turned into a “jam”. Remove from the heat and add lemon juice. Stir everything well and set aside.
- In a large bowl mix together rolled oats, almond flour, cornstarch, coconut sugar, cinnamon, salt, and baking soda. Then add melted coconut oil and maple syrup. Stir everything well until evenly combined.
- Take half of the crust mixture and press it firmly, using a back of a spoon or your fingers, into a baking dish until flat layer is formed. Add fig layer on top of it. Make sure to spread it evenly. Then add remaining half of the crust and crumble it on top of the fig layer. Use a spoon to press it firmly.
- Bake for about 20 minutes. When done let it cool completely before cutting into bars. We recommend you to cool them in the fridge and then cut, that way you’ll prevent them from falling apart.
- Store it for up to 1 week in an airtight container. Enjoy your Homemade Oatmeal Fig Bars!
