Kale, Quinoa, and Carrot Salad

We are so happy to finally start with our salad recipes! Spring is one of our favorites seasons and is a perfect time of a year for all of us to start detoxifying our bodies. Most of us cut sugars and heavy foods and seeks for diet recipes to get in shape right before summer starts. We all want to be fit, aren’t we? 🙂

Like most women, I’m usually struggling with weight during the winter months. Lack of physical activity, a lot of sitting, sweets, yeah, I always get a few extra pounds. It’s a high time to get myself moving more and getting rid of that extra weight!

The perfect way to start is to swap your usual dinners with healthier and lighter options – like salads! Our Kale, Quinoa, and Carrot Salad is a perfect meal salad to start with! Not sure about you, but I’m changing my habits and starting with salad dinners!
Kale Quinoa Carrot Salad
Kale hasn’t been my favorite, mostly because it’s kinda hard and not very soft if you don’t know how to prepare it for salads. The trick is in a massage. Yes, you heard it right – massage! 🙂 Even it sounds weird, try it and you’ll be surprised. Massage helps kale to become soft and to tenderize. A salad is 10 times better if you practice this.

Kale Salad
Prep time: 5 min   Cook time: 3 min   Total: 8 min




 

 

INGREDIENTS

  • 1/2 cup (90g) cooked quinoa
  • about 5 fresh kale leaves
  • 1 small carrot
  • 1/4 of a medium size onion

DRESSING

  • 1 tablespoon of extra virgin olive oil
  • juice of a half a lemon
  • pinch of salt

INSTRUCTIONS

  • To make a dressing add all the wet (dressing) ingredients into a small bowl and mix them until combined. Set aside.
  • Remove stems/ribs from kale leaves. Cut leaves into bite-size pieces. Add kale to a ball and pour dressing over it. Massage kale until it darkens and tenderizes. Set aside
  • Jullien Carrots and chop the onion. Add quinoa, carrots, and onion into a bowl with kale. Sprinkle with a pinch of salt. Toss everything together until combined.
  • Enjoy your Kale Quinoa Carrot Salad!
