Mashed Purple Sweet Potatoes (Vegan)
Hello Everyone! We all know the good old mashed potato recipe, but why don’t we add some color to the plate and try something new? We’ve just recently discovered purple sweet potatoes, and how beautiful they look! We’ve never seen such a nice purple color, it looks amazing. This is why we decided to make a quick and easy Mashed Purple Sweet Potatoes, a side dish you are going to love!
This recipe is great for kids, they’ll love the color, and even if they don’t like sweet potatoes, or any potatoes at all, they will enjoy eating this one. Not only it looks stunning, but it also tastes so good with its rich texture.
Serve Mashed Purple Sweet potatoes with anything you like. It goes perfectly with some grilled vegetables or roasted tofu! If you are not vegan, then serve it with grilled salmon or chicken breast.

INGREDIENTS
- 1 medium to large purple sweet potato
- 1 tablespoon olive oil + 1 teaspoon for garnishing
- 50 ml (1.69 fl oz) non-dairy milk (we used almond milk)
- 1/4 teaspoon Himalayan salt
- 1/3 teaspoon hemp heart (optional)
INSTRUCTIONS
- Wash and cut the sweet potato into cubes. They will cook faster if the cubes are smaller (but don’t make them too small). Add them into a large pot and add enough water to cover them, then add at least 2-3 cups more water. At this point add salt. Bring the mixture to a simmer over medium-high heat.
- Cook sweet potatoes until they are tender, about 15 minutes.
- Drain and return the potatoes into a pot. Add olive oil and non-dairy milk, and start mashing the potatoes using a masher or even a fork can do good. If you want creamy mashed potatoes you can use a food processor.
- When done, serve into a shallow dish, and garnish with some hemp hearts and olive oil on top.
