Oven-Baked Chicken Pilaf

If you don’t like rice to be too crispy on top you can cut the baking time for 15 minutes but we strongly encourage you to try this one, it’s absolutely amazing. Crispy rice with a chicken, this is always a good combo!

Crispy Chicken Rice
Prep time: 5 min   Cook time: 1 h 30 min   Total: 1 h 35 min   Servings: 4




 

 

INGREDIENTS

  • 2.5 cups (500 g) pilaf rice
  • 2 medium chicken legs 
  • 1 small red onion (chopped)
  • 2 teaspoons of ground parsley
  • 1/2 teaspoon salt (optional – depends on your taste)
  • 5 cups (1000 ml) water
  • 1 tablespoon + 1 teaspoon olive oil 

INSTRUCTIONS

  • Preheat the oven to 450°F (230°C). In an ovenproof dish add rice, parsley, 1 teaspoon of olive oil and salt. Stir everything well and cover with water. Let it bake in the oven for about 20 minutes.
  • In the meantime in a large frying pan add 1 tablespoon of olive oil and chopped onion. Cook over medium heat until it becomes translucent. Then add chicken legs and cook for 5 minutes on each side. Remove from the heat. 
  • Add chicken legs with onions to the rice (stir a little bit) and bake for 1 hour and 10 minutes on 390°C (200°C) until the rice absorbs all the water and creates a golden brown layer on top. 
  • Let it cool for 10-15 minutes before serving.
