Oyster Mushroom Omelette

Hello Everyone! For today’s recipe, we have one amazing vegetarian dish – Oyster Mushroom Omelette. This recipe is simple and won’t take you a lot of time to make. Perfect as a breakfast or dinner!

Ever since I was a kid I never liked omelette. It might sound strange but the fact that eggs are whisked somehow bother me and I could never eat it. I must also say that I never try, I just wanted regular fried eggs. Many years after that I decided to give it a try. I sliced a couple of mushrooms added beaten eggs and ever since then this is my favorite way of eating eggs!

Luckily we both like omelette which makes this recipe one of our favorite breakfast or dinner meals.
Homemade Omlette
The good fact about the omelette is that you can add basically anything you like in it. Bell peppers, cheese, onion, carrot. We decided to go on with oyster mushrooms. If you don’t have oyster mushrooms use any kind you have, it will be delicious, we promise! 🙂

Mushroom Omelette
Prep time: 2 min   Cook time: 7-8 min   Total: 10 min   Servings: 1




 

 

INGREDIENTS

  • 2 eggs
  • 2-3 pieces oyster mushroom
  • pinch pepper
  • pinch Himalayan salt
  • 1 tablespoon olive oil

INSTRUCTIONS

  • In a medium-size bowl add eggs, salt, and pepper, and whisk until the eggs are completely beaten. Set aside.
  • Slice or chop the oyster mushrooms. Heat olive oil in a pan and add mushrooms. Cook them for about 4-5 minutes on medium heat until they start to become slightly golden brown from one side.
  • Add beaten eggs on top of the mushrooms, and cook 2-3 minutes on one side, then flip (as you would do with the pancakes) and cook the other side for just one minute.
  • When done, serve in a shallow dish. Enjoy your Oyster Mushroom Omelette!
