Peanut Butter Stuffed Chocolate Covered Dates

For today’s recipe we have something we’ve been postponing to make for a long time.. We had finally found the ideal dates – incredibly soft, creamy peanut butter, and extra dark chocolate, and there were no more excuses :). We are blown away with the outcome – Peanut Butter Stuffed Chocolate Covered Dates are officially our favorite snack – dessert recipe.

Stuffed Chocolate Covered Dates
For this recipe we used vegan dark chocolate, but you can you any chocolate you like. Feel free to experiment with the ingredients and use any chopped nuts even dry fruit on top and make your customized chocolate covered dates.

Chocolate Covered Dates

INGREDIENTS

  • 8 soft dates (pitted)
  • about 8 teaspoons peanut butter
  • 2.5 oz (70g) dark vegan chocolate
  • about 3 tablespoons chopped pistachios

INSTRUCTIONS

  • Take out the pits from each date. Separate the dates with your fingers to make a cavity, but don’t entirely separate them. 
  • Depending on the size of your dates, spoon about 1 or 2/3 teaspoon peanut butter into each date cavity. Freeze the dates for about 30-45 minutes. This step is optional, but we encourage cooling because peanut butter will not melt as much as it would if it was at room temperature when coated in chocolate later.
  • In the mean time melt the dark chocolate and chop pistachios.
  • Dip the stuffed dates into the melted dark chocolate, coating them as much as you like. Place dates on a cooling rack or on a parchment paper. Sprinkle each date with chopped pistachios. Let them cool in the fridge for 30 minutes or until the chocolate sets.
