Vegan Poached Stuffed Apples – Tufahije
Hello Everyone! We would like to share with you a vegan variation of a popular Bosnian dessert – Tufahije. Tufahije is the most popular dessert made from whole apples and walnuts. They are absolutely delicious – sweet, creamy, and yummy! If you haven’t tried Poached Stuffed Apples – Tufahije – you must make them for the upcoming holidays!
Be careful when you choose apples. We’ve been testing several apple types and Golden Delicious are by far the best and they won’t break apart. When it comes to filling you can combine ground walnuts and almonds, but we prefer using only walnuts. Raisins can be a good option too. There are so many choices. What’s yours? This recipe is 100% vegan, gluten-free, dairy-free, and delicious! If you want to make a traditional non-vegan option use whipped egg whites when making a filling, instead of whipped cream.

INGREDIENTS
- 10 medium size apples
- 5 cups sugar
- 7 1/2 cups water
- 1 1/4 cup ground walnuts
- 1/2 teaspoon cinnamon
- 1/2 cup vegan whipped cream

INSTRUCTIONS
- In a large pot add sugar and water. Bring to boil and simmer a few minutes stirring constantly until all sugar is dissolved
- Peel and core the apples, but make sure not to break them. For this recipe, you’ll need whole apples. Add 3-4 apples to the simmering syrup and cook for about 5-10 minutes (depending on their size) or until they are soft enough to poke with a fork. You can add all apples but for me, it was easier this way. Don’t overcook the apples!
- In a medium-size bowl add walnuts, cinnamon, and whipped cream (don’t add whole whipped cream add one tablespoon at the time until you reach the right consistency). Mix everything until combined and stuff the apples. Refrigerate them and serve cold.
