Prawns & Rocket Pasta Recipe
A couple of months ago, when we were in Italy, we discovered so many good pasta recipes! We’ve already shared with you Italian Pesto Salmon Pasta but we promised to share with you all of them. So get ready for another amazing recipe – Prawns Rocket Pasta. It’s unlike anything you’ve ever tried, trust us!
This recipe doesn’t use any store brought sauce, everything is prepared right away! We basically made our own tomato sauce by using one large ripe tomato. The softer it is the better the sauce will be, and the results will blow you away.
For this recipe, we haven’t been using salt because prawns are the type of sea fish which already contains a lot of salt. When it comes to the salt we have a rule, the less we add it the better if it can be avoided then let’s do it! 🙂

INGREDIENTS
- 3.5 oz (100 g) uncooked Penne pasta
- 1 large fresh tomato
- 5.3 oz (150 g) fresh prawns
- 1.4 oz (40 g) fresh mushrooms (any type)
- handful of rockets
- 1/4 teaspoon ground pepper
- 1 tablespoon olive oil
INSTRUCTIONS
- Cook Penne pasta: Add fresh water, about 1 liter, in a large pot and bring it to boil. Add pasta. We don’t use salt or oil here. Stir the pasta. Test occasionally. Cook for about 7-10 minutes to be done. When done drain.
- Strain cooked pasta and set aside. Save 2-3 tablespoons of pasta water.
- Add olive oil into a large saucepan and put over medium heat. Chop tomato and mushrooms into small cubes and add into a saucepan along with pasta water. Add pepper and stir everything. Cook for about 7 minutes until tomato becomes completely soft, then add prawns, cover the saucepan and cook for another 4 minutes. Add water if necessary.
- When done, add the pasta in the saucepan. Stir everything and add rocket. Stir again.
- Let it cool a bit and serve. Enjoy your Prawns Rocket Pasta Recipe!
