Pumpkin Pancakes
Hello Everyone! We are continuing with our pumpkin recipes. On today’s menu, we have delicious Pumpkin Pancakes! 🙂 We are sure you are already interested to hear how to make pumpkin pancakes in less than 20 minutes! Yes, that’s right, you won’t need more than 20 minutes.
This recipe is NOT vegan, but you can go vegan very easily. All you have to do is to change 2 ingredients + 1 one more. Instead of egg, make a flax egg (1 tablespoon flaxseed meal + 3 tablespoons water), and instead of honey, you can use maple syrup. To reach a fluffy texture, just add 1 teaspoon of baking powder.Â
This recipe is 100% gluten-free and dairy-free. It’s perfect for vegetarians.

INGREDIENTS
- 7-8 tablespoons rolled oats
- 4 tablespoons pumpkin puree
- 2 tablespoons honey
- 1 egg
- 2/3 teaspoon pumpkin spice
- about 5.1 fl oz (150 ml) oat milk (use any nondairy milk)
- 1 teaspoon coconut oil (for greasing a pan)
TOPPING Ingredients
- honey
INSTRUCTIONS
- To make a pancake batter add oat flour, pumpkin puree, egg, honey, pumpkin spice, and oat milk (about 2/3 of it) into a blender and blend on high until smooth, then add gradually the rest of the milk until you reach the desired consistency. In some cases we were adding more in some cases less milk, it depends on the other ingredients, we never stick to the measurements :).
- Grease the pan with coconut oil. Heat it over medium to high heat. Pour the batter into the pan to form the pancake shape. You might need to use a spoon to flatten them because the batter is thick.
- Cook each pancake for about 2 minutes, or until the bubbles start to form, then flip it over and cook for another minute.Â
- Serve and eat the way you like. We topped them with some extra honey.

- We got 8 Pumpkin Pancakes from this mixture.Â
