Happy Halloween Everyone! 🎃 We are so happy to share with you a recipe that we’ve been saving for this special day! It’s a Pumpkin Spice Granola, crunchy, delicious, and super easy to make! This delicious granola recipe has only 7 ingredients, it’s not too sweet, and it’s perfectly spiced.

Not sure about you but October and November are our pumpkin months! 🙂 During that period we are obsessed with “all pumpkin” recipes. Did you know that pumpkins are considered a fruit? Yes, that might seem surprising but they are! 🙂 They’re also highly nutritious, rich in vitamin A, and full of antioxidants.
Pumpkin Spice Granola

Vegan Spice Granola

INGREDIENTS

  • 2.5 cups (about 210g) whole rolled oats
  • 1 cup (125g) pecans
  • 1/2 cup (60g) raw pumpkin seeds
  • 4 tablespoons pumpkin puree
  • 1/5 cup (45g) coconut oil (room temperature – melt if solid) 
  • 1 tablespoon pumpkin spice
  • 4 tablespoons maple syrup

INSTRUCTIONS

  • Preheat the oven to 300 degrees Fahrenheit (150 °C). Line a large baking sheet with a parchment paper. Set aside.
  • In a large bowl mix together coconut oil, maple syrup, and pumpkin puree until combined. NOTE: Add more maple syrup if you want sweeter granola!
  • Add oats, pecans, and pumpkin seeds into the bowl with the wet ingredients. Use spatula to mix well and toss to coat. The mixture will be mild sticky.
  • Spread the mixture in a thin layer on a baking sheet. Bake for 20-25 minutes stirring halfway through. When done let it cool completely, don’t toss it. 
  • Transfer into an airtight storage container. Store it for up to 2-3 weeks. Enjoy your homemade Pumpkin Spice Granola!
