Red Bean Chocolate & Coconut Mousse

For today’s recipe, we have something quite unusual –  Red Bean Chocolate Mousse. It sounds strange, right? How is it possible to make a chocolate mousse with red beans? Well, it is possible, and guess what, it tastes absolutely amazing! 🙂

We all have sweet cravings from time to time, but what if we are feeling too lazy to make something and we want something very quick & easy? This recipe is the way to go, no baking is required. All you have to do is to whip and blend a couple of ingredients and you are ready to enjoy one of the best chocolate mousse recipes ever.

If you don’t like coconut, feel free to leave it out and add ground nuts instead. Almonds and hazelnuts are a great choice.

Chocolate and Coconut Mousse

INGREDIENTS

  • 1 can red beans (400 g can)
  • 3 tablespoons raw cacao powder
  • 3-4 tablespoons maple syrup
  • 4 tablespoons shredded coconut

  • pistachios

INSTRUCTIONS

  • Prepare 2 medium size bowls, one for beans one for bean juice. Drain the can of beans using strainer over one of the bowls until only the beans remain into a strainer.
  • For this recipe, you’ll need the whole amount of the beans from the can and half the amount of the beans juice. Use an electric mixer to whisk the beans juice for about 5-8 minutes until stiff peaks are formed, and the mixture looks like aquafaba.
  • Add red beans, cacao, coconut, and maple syrup in a food processor, and blend until creamy. Transfer the mixture in a bowl with the whipped beans juice and gently stir everything until combined. Transfer the mousse into small jars. You can eat it right away or leave it in a fridge for 1 hour until it thickens a bit.
