Spelt Buckwheat Bread with Sesame Seeds

Did you know that buckwheat can help you lower your bad cholesterol? Aside from that, it has so many health benefits that some consider it a superfood. We decided to increase the amount of buckwheat in our diet. The best and the easiest way to do so is to make a bread, right? For today’s recipe we have amazing Spelt Buckwheat Bread with Sesame Seeds!

As you might have guessed from the title, this bread contains spelt flour as well. We use spelt flour as the base for the majority of our breads. It adds the best texture and taste to any recipe.
Spelt Buckwheat Bread with Sesame
Buckwheat has heart-healthy nutrients such as magnesium and fiber. It’s been consumed in India for centuries and it’s considered as a great grain-substitute for fasting. This recipe is perfect for vegan as it doesn’t contain any dairy. It’s also yeast-free!

Spelt Buckwheat Bread

INGREDIENTS

  • 2 1/3 cups (280 g) of whole grain spelt flour
  • 1 cup (120 g) of buckwheat flour
  • 1 1/2 teaspoon baking soda
  • 6 tablespoons olive oil 
  • 1 teaspoon Himalayan salt
  • about 1 1/4 cup (300 ml) warm water
  • juice of one whole lemon
  • 2 1/2 tablespoons flax seeds
  • 5 tablespoons raw sunflower seeds

TOPPING INGREDIENTS (OPTIONAL)

  • raw sesame seeds (black and white)

INSTRUCTIONS

  • Preheat the oven to 320°F (160°C). Line your loaf pan with parchment paper and set aside.
  • In a large bowl combine all dry ingredients except the sunflower and flex seeds.
  • Make sure that your water is warm but not hot.
  • Add half of the water, lemon juice, and olive oil into a bowl with dry ingredients. Stir everything gently, using a wooden spoon or silicone spatula. Then gradually add more non dor water and stir until you reach a battery consistency. If the consistency is too dry add more water. At the end stir in sunflower seeds and flax seeds. NOTE: After baking, sunflower seeds turn green due to the reaction with baking soda.  This is completely normal. To prevent this we added lemon juice in previous steps.
  • Dump the mixture into the loaf pan. Use a spoon or spatula to evenly distribute the butter. Add black and white sesame seeds (topping) on top.
  • Bake for about 40-45 minutes. Check with a toothpick – if it comes out clean then it’s done.
  • When done, transfer it to a cooling rack and let it cool at least 15 minutes before slicing it.
