Spinach Chia Pudding

Staring a day with a quick and easy to make breakfast is something all the busy minds are hoping for! It’s even better when you don’t have to make it in the morning at all! You already know we are talking about chia puddings. 🙂 Chia pudding is a perfect breakfast prepared a night before in only 5 minutes! Today’s recipe is Spinach Chia Pudding – an absolute must try!

This sweet green delight goes perfectly with blueberries or any other berries that you have.

Chia seeds are great for your digestive system but only if you know how to use them! The main mistake people do is not let them expand for some time. The longer they stay the better they are for you. They can expand up to 27 times their weight. Imagine what would happen if you let that happen in your stomach. 🙂 We recommend waiting at least 2 hours.  
Spinach Chia Pudding
You probably noticed that we usually add shredded coconut or ground flax seeds to our chia puddings! We love adding extra dietary fiber to them more flavor. I know we said it so many times but we LOVE our chia puddings. We love experimenting with flavors. Having this gorgeous-looking jar of the most delicious Spinach Chia Pudding in the morning was the highlight of our day.

Blueberry Spinach Chia Pudding
Prep time: 2 – 8 h   Cook time: 4 min   Total: 2 – 8 h 4 min   Servings: 1




 

 

INGREDIENTS

  • 2.5 tablespoons chia seeds
  • 1 tablespoon ground flaxseeds
  • 1 cup fresh spinach
  • 2 dates (pits removed)
  • approx 3.7 fl oz (110 ml) of unsweetened non-dairy milk (We used almond milk)

TOPPING

  • fresh blueberries

INSTRUCTIONS

  • Add spinach, dates, and non-dairy milk into a blender and blend on high until smooth. Set aside. In a small mason jar (or a small glass) add chia seeds, ground flaxseeds, and blended mixture. Stir together until combined. Tighten lid (or cover with plastic wrap). Place chia pudding in the fridge for at least 2 hours or overnight (better).
  • Add blueberries on top of the chia pudding.
  • Enjoy your Spinach Chia Pudding!

NOTES

  • The texture is thicker and more flavorful if it stays for about 6-8 hours in the fridge – overnight.
