Strawberry Chia Pudding
There are so many variations of chia pudding. The one I recently made was strawberry chia pudding – I simply loved it! You have to try it! My original idea was to make a chia pudding with a layer of strawberry mousse on top – but then I wanted to simplify it – this is a breakfast recipe after all – and I end up making a strawberry chia pudding recipe. 🙂 I don’t regret it! It’s so delicious and rich in flavors.
Strawberry Chia pudding has enough fiber, proteins, healthy fats, and sugar which makes it a perfect and nutritious breakfast recipe idea. This recipe is 100% vegan, gluten-free, sugar-free, and budget-friendly breakfast recipe.
Prep time: 2 h  Cook time: 5 min  Total: 2 h 5 min  Servings: 1
INGREDIENTS (for pudding)
- 2 tablespoons chia seeds
- 2/3 teaspoon maple syrup (or honey if you are not a vegan)
- approx 1/2 cup (100ml) of unsweetened non-dairy milk (I used oat milk)
INGREDIENTS (for strawberry shake)
- 4 small-medium size strawberries
- 2 tablespoons of rolled oats
- approx 1/4 cup (50ml) of unsweetened non-dairy milk (I used oat milk)
TOPPING
- 2/3 tablespoon chopped walnuts
- 1 tablespoon coconut flakes
INSTRUCTIONS
- Add all the chia pudding ingredients to a jar (or a small glass) and stir together. Tighten lid (or cover with plastic wrap). Place chia pudding in a fridge for at least 2 hours or overnight.
- Add all the shake ingredients into a blender and blend until smooth and creamy. Add the mixture to the top of the chia pudding and stir with a spoon.
- Enjoy Strawberry Chia Pudding!
