Vegan Apple Cinnamon Muffins
For today’s recipe we have Vegan Apple Cinnamon Muffins – perfectly soft and tender. Our idea was to modify one of our absolutely the best recipe and to try to make super delicious muffins that we can take with us on the go!
These muffins are perfect as a breakfast or a healthy dessert. Instead of coconut sugar we used maple syrup. Besides that, we swapped bananas with flax egg and apple sauce. This was the best decision because the apple flavor is super strong and in combination with cinnamon these muffins reminds us on mini apple pies :).

INGREDIENTS
- 1 1/2 cup (175 g) of quinoa flour
- 1 1/2 cup (170 g) of almond flour
- 2 tablespoons coconut flour powder
- about 1/2 tablespoon of baking soda
- 1 1/2 teaspoon baking powder
- 1/2 cup (about 110 ml) maple syrup
- 3 flax eggs (3 tablespoons of ground flax seeds + 9 tablespoons of water)
- 1 cup chopped apples (about 1 medium-large apple)
- 1/3 cup (75 g) melted coconut oil
- 6 tablespoons apple sauce
- 1 teaspoon cinnamon
- (OPTIONAL) 1-2 tablespoons almond milk if needed
INSTRUCTIONS
- Preheat the oven to 350°F (180°C). Prepare the silicone muffin baking pan (if you are using non-silicone pan then grease it with coconut oil or other vegetable oil) and set aside.
- In a small bowl make flax eggs by adding 3 tablespoons of flax seed meal (ground flax seeds) and 9 tablespoons of water. Let it sit for at least 5 minutes. Set aside.
- Meanwhile, combine all the dry ingredients (except chopped apples) into a large mixing bowl and stir until evenly combined.
- Add flax egg, melted coconut oil, apple sauce, and maple syrup into a bowl with dry ingredients. Stir everything well. If the mixture seems too dry add one or two tablespoons of almond milk.
- When everything is evenly combined add chopped apples and gently stir the batter. Dump the mixture into a silicone pan and fill each cup.
- Bake for about 20 minutes. Check with a toothpick – if it comes out clean then it’s done. Don’t over bake them, these are soft texture muffins.
- Let them cool completely.
