Easy Vegan Banana Bread
This morning I went on a walk in my neighborhood. Everything was so calm, people were still sleeping, and I was thinking about a recipe I can make, as soon as I get back, for my stronger half :). I didn’t have a lot of ingredients but I wanted to make something sweet, satisfying, and delicious. Vegan Banana Bread was the first thing that came to my mind.
It was the right choice. We cannot stress enough how delicious this amazing dessert is. It smells like cinnamon and bananas mixed together :). If you have some ripe bananas and don’t know what do to with them, try this recipe, you are going to love it.
To mash bananas use a fork or a mixer, it really doesn’t matter, it will taste delicious either way. This recipe is very basic but has a rich taste and amazing smell. There are no leftovers for this one :). The recipe is 100% vegan and dairy-free, but contains gluten, as we used spelt flour.

INGREDIENTS
- 2 cups (280 g) of spelt flour
- 2 tablespoons coconut flour
- 4 medium ripe bananas
- 1/2 cup (100 g) coconut sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/3 cup (75 g) melted coconut oil
- 1 tablespoon vanilla sugar (or vanilla extract)
- about 1 tablespoon cinnamon
TOPPING INGREDIENTS (OPTIONAL)
- 1/2 banana (sliced)
- about 1/4 cup (40 g) chopped raw almonds
INSTRUCTIONS
- Preheat the oven to 350°F (180°C). Line your loaf pan with parchment paper and set aside.
- In a large bowl combine all dry ingredients.
- In a medium-size bowl, mash bananas using a fork. We like leaving a few chunks, it doesn’t have to be perfectly mashed.
- Add bananas and melted coconut oil into a bowl with dry ingredients. Stir everything gently, using a wooden spoon or silicone spatula, until you reach a batter consistency. If the consistency is too dry (rare cases) add some plant-based milk (almond for example). We haven’t added anything.
- Dump the mixture into the loaf pan. Use a spoon or spatula to evenly distribute the butter. Add sliced bananas and chopped almonds on top. (topping is optional)
- Bake for about 45-50 minutes. Check with a toothpick – if it comes out clean then it’s done.
- When done, transfer it to a cooling rack and let it cool at least 15 minutes before slicing it.
