Vegan Blueberry & Raspberry Smoothie Bowl
Vegan Blueberry & Raspberry Smoothie Bowl is delicious and refreshing breakfast recipe idea. Most of my smoothie bowl recipes contain spinach, kale, cucumber, or other greens. For this one, I make a bit difference choice and for the base I used zucchini. Zucchini has very neutral taste and it’s perfect for smoothies, especially if you or your loved ones don’t like it.
This recipe is a “perfect summer in a bowl” – this is how I like to call it. It contains all summer fruits and veggies and tastes absolutely amazing. By adding ice instead of water it can be a perfect icy refreshing smoothie bowl delight.

INGREDIENTS (Smoothie)
- 1 medium size peach
- 1/2 cups (about 50g) fresh blueberries
- 1/3 cups (about 40g) fresh raspberries
- 1 cup (about 150g) sliced zucchini
- 1 tablespoon peanut butter
- 3 tablespoons rolled oats
- about 2.03 fl oz (60 ml) coconut water (or regular water) – add more if necessary
TOPPING (Optional)
- about 8-10 Blueberries
- 4-5 Raspberries
- coconut flakes
INSTRUCTIONS
- Add all smoothie ingredients to a blender. Blend on high until you reach smooth and creamy consistency.
- Pour everything into a bowl. Add topping ingredients.
