Vegan Pumpkin Chia Pudding
November is all about pumpkins! Do you agree with us? 🙂 You know how much we love our chia puddings and why we encourage people to eat chia pudding at least twice a week. We had some homemade pumpkin puree leftovers and why not making a Vegan Pumpkin Chia Pudding with it!

This recipe is 100% vegan, gluten-free, and dairy-free as our other chia pudding. If you like this one, search on our website for other chia puddings, we have 9 other recipes. INGREDIENTS
- 2 tablespoons chia seeds
- 3 tablespoons pumpkin puree (2 for pudding 1 extra for pumpkin puree layer)
- 1/4 teaspoon pumpkin pie spice
- 1 teaspoon maple syrup (or another liquid sweetener) – optional
- approx 3.4 fl oz (100ml) of unsweetened non-dairy milk (I used oat milk)

- Pumpkin seeds
INSTRUCTIONS
- In a small mason jar (or a small glass) add chia seeds, 2 tablespoons of pumpkin puree, maple syrup, pumpkin pie spice, and nondairy milk. Stir together until combined. Tighten lid (or cover with plastic wrap). Place chia pudding in the fridge for at least 2 hours or overnight (better). When done transfer 2/3 of the pudding into another jar. Then add 1 tablespoon of the pumpkin puree, and add the rest of the pudding on top. This way it will look prettier and absolutely pumpkiny :).
- Before serving add pumpkin seeds on top of the chia pudding.

NOTES
- This is a serving for one person. For the best results prepare the pudding before going to sleep. Let it stay in the fridge overnight, you’ll save yourself time in the morning and the texture of the pudding will be amazing.
