Vegan Stuffed Peppers

Stuffed peppers have always been one of the meals I enjoyed eating ever since I was a kid. But the ones that my mother made had meat which I try to avoid as much as I can, especially red meats that have been completely eliminated from my diet years ago. I was searching for a good meat alternative for stuffed pepper and I found that beans and rice goes very good together.

These Vegan Stuffed peppers have been Darko’s and mine go to meal ever since then. They are satisfying, have a lot of proteins, tastes amazing, and are perfect meatless meal!

Plant Based Stuffed Peppers

INGREDIENTS

  • 3 large red bell peppers
  • 2 teaspoons vegan parmesan cheese
  • 1 cup cooked canned white beans
  • 1 cup cooked brown rice
  • 2/4 cup tomato sauce
  • 1/2 cup cooked sweet corn
  • 1 tablespoon olive oil
  • 2/3 small red onion chopped
  • 2 teaspoons fresh cilantro chopped
  • salt to taste
  • pepper to taste

INSTRUCTIONS

  • Preheat the oven to 350°F (170°C). Line a pan with parchment paper and set aside.
  • Heat a pan with olive oil and saute onions until translucent, about 5 minutes.
  • In a large bowl, mix together beans, rice, corn, salt, pepper, and tomato sauce. Stir well until combined. Then add this mixture to the pan with onions and cook for about 2-3 minutes on medium heat.
  • Remove tops from peppers and scrape out seeds. Cut each pepper in half vertically right through the middle of the stem and the bottom.
  • Evenly fill 6 halves of prepared peppers with the filling mixture and set inside a baking dish.
  • Bake in oven for about 30-40 minutes until peppers have softened. When done add some vegan parmesan cheese and fresh cilantro on top of each pepper.
  • Serve and enjoy your Vegan Stuffed Peppers!

NOTES

  • Before baking the peppers you can add vegan mozzarella cheese on top of each pepper if you have any, we couldn’t find a good one at the time that’s why we skipped it..
