Vegan Sugar-Free Energy Balls

INGREDIENTS
- 6.2 oz (175 g) of whole Medjool Dates (about 20 small to medium size dates)
- 5 tablespoons of walnuts
- 4 tablespoons of sesame flour (you can use almond flour if you don’t have sesame)
- 1 teaspoon of ground flax seeds
- 1 tablespoon of vanilla extract
- about 0.7 oz (20 g) of chopped almonds
- about 0.7 oz (20 g) of chopped hazelnuts
- (optional) 2 tablespoons of ground coconut
INSTRUCTIONS
- Add dates to a food processor and process on high until finely ground.
- Add walnuts, sesame flour, flax seeds, and vanilla extract and grind again until a dough begins to form. If the mixture is too dry add one teaspoon of water.
- Move mixture to a bowl and add chopped almonds and hazelnuts.
- Form mixture into balls and repeat until no dough remains.
- Roll the balls into the coconut.
- Serve and enjoy your Sugar-Free Energy Balls the way you like!
NOTES
- Try to use soft dates (100% dates without any artificial sugars added). If you are using very dry dates then soak them in the water for about 10-15min.
- From this mixture, I got 19 vegan sugar-free energy balls.
