Vegan Walnuts Energy Balls – 2 Ingredients

It’s almost the end of February and it’s a high time to start preparing your body for summer months. We want to encourage you to take care of your health by implementing workouts at least twice a week! If you are already working out regularly WELL DONE! In this name, we want to introduce to you our new recipe – Vegan Walnuts Energy Balls – which is one of the tastiest and the best post-workout snacks.

Vegan Walnuts Energy Balls

These energy balls are by far the softest we ever made. One thing to note when you are making this recipe is to be careful not to over grind the walnuts because the balls will be too oily. As you all know if you grind any of the nuts for a few minutes you can get a nut butter, in this case, we don’t want that :). This recipe has just 2 ingredients and an incredible taste.

INGREDIENTS

  • 2.1 oz (60g) of whole Medjool Dates (about 8 small to medium size dates)
  • 1 cup (125g) of walnuts
  • 1 teaspoon water (optional)

INSTRUCTIONS

  • Add walnuts to a food processor and process on high until finely ground. Remove 1/4 of grounded walnuts and save for later.
  • Add dates and grind again until a dough begins to form. If the mixture is too dry add one teaspoon of water.
  • Form mixture into balls and repeat until no dough remains. Roll each ball into the 1/4 of the grounded walnuts that you previously saved.
  • Serve and enjoy Vegan Walnuts Energy Balls the way you like!

NOTES

  • Try to use soft dates (100% dates without any artificial sugars added). If you are using very dry dates then soak them in the water for about 10-15min.
  • We got 12 vegan walnut energy balls from this mixture.
