Vegetable Fried Rice With Mushrooms
Hello Everyone! We’ve just realized that we haven’t shared with you one of our most cooked side dish. Vegetable Fried Rice With Mushrooms is the easiest to prepare and the most delicious side dish we are making over and over again. We love serving it with Oven-Baked Rosemary Salmon.
If you are feeling lazy during the week, we are glad to inform you that this dish is perfect for meal prepping. What we love to do it to either chop all the vegetables and freeze them, and use them during the week, not just for this recipe. The other thing we do is we cook the whole meal and refrigerate it. it’s good for next 5 days.

INGREDIENTS
- 2 cups cooked rice (1 cup uncooked)
- 3 medium-size common mushrooms
- 1/2 cup broccoli
- 6-7 brussels sprouts
- 1/3 medium-size zucchini
- 1/2 red bell pepper
- 1 tablespoon olive oil
- pinch of salt
INSTRUCTIONS
- Cook the rice. We are not going to explain here in details on how to cook the rice. It’s very simple, rinse the rice, then just add the rice into a pot and double the amount of water. Let it cook, it’s done when there is no water in the pot. Set aside.
- While the rice is cooking, chop roughly all the vegetables and slice the mushrooms.
- In a large pan add olive oil, chopped vegetables, sliced mushrooms, and salt. Cook over low-medium heat for about 13 minutes. Then add cooked rice and cook everything for about 2-3 more minutes, until all the liquid is dissolved and rice start to “fry”. When done, remove from the heat.
- Let it cool for about 5 minutes before serving. Enjoy your Vegetable Fried Rice With Mushrooms!
