Beetroot Energy Balls

We’ve been obsessed with energy balls lately. For today’s recipe, we decided to share one more vegan energy balls recipe with one unusual ingredient – Beetroot! It might sound strange, but you won’t even notice beetroot in this amazing Beetroot energy balls recipe!

These amazing energy bites are perfect even for people who hate beets! The taste is completely masked with pumpkin spice, cinnamon, and cacao! I did a taste test with my father – I haven’t told him what’s inside and he couldn’t recognize the taste of beets at all! 🙂
Beetroot Energy Balls
This recipe is perfect if you need a quick & healthy dessert or post workout snack but you don’t have a lot of free time! It will take you just 5 minutes to make them! So fast and easy! What we love about our energy ball recipes is that all of them are gluten-free, dairy-free, sugar-free, and 100% vegan!

Beetroot Protein Balls
Prep time: 2 min   Cook time: 3 min   Total: 5 min   Servings: 7




 

 

INGREDIENTS

  • 1 medium to small size cooked beetroot
  • 3/4 cup (100 g) Brazil nuts
  • 7 Medjool dates (soft and pitted)
  • 1 tablespoon raw cacao powder
  • 1/2 cup (about 50 g) of shredded coconut + extra for coating
  • 1/2 tablespoon pumpkin spice
  • 1/4 teaspoon cinnamon

INSTRUCTIONS

  • Add all ingredients into food processor and process until evenly combined and dough starts to form.
  • Form mixture into balls and repeat until no dough remains.
  • Roll each ball into shredded coconut.
  • Serve and enjoy Beetroot Energy Balls the way you like!
