Red Cabbage Spinach Radish Sprouts Salad

This delicious vegan red cabbage spinach radish sprouts salad is perfect for a side dish or a dinner. If you are looking for a light and fresh meal salad that is also satisfying and filling, you are in the right place! This salad is exactly what you need! 🙂 Also, this red cabbage spinach salad is 100% vegan, gluten-free, and dairy-free.

It doesn’t contain salt or any other spices – this was my choice, I don’t like adding salt to salads. Red cabbage spinach radish sprouts salad is also a great veggie dinner option for kids who don’t like spicy foods – there are no spices in it.




 

Cabbage spinach salad

Eating foods with a lot of vitamins is crucial during this winter season. Did you know that red cabbage is a great source of vitamin K, C, B6, and manganese? Not only that red cabbage is one of the healthiest foods in the world. It also contains fiber and copper and many other nutrients.

INGREDIENTS

  • large handful of shredded red cabbage
  • a handful of baby spinach
  • 0.35oz (10g) radish sprouts
  • 3-4 green olives
  • 3 tablespoons of cooked chickpeas

DRESSING

  • 1 tablespoon of extra virgin olive oil
  • 2/3 tablespoon of tahini
  • 1 tablespoon of balsamic vinegar

Dressings

INSTRUCTIONS

  • Add all the dry ingredients (cabbage, spinach, radish sprouts, olives, and chickpeas) to a mixing bowl.
  • Transfer all the wet ingredients into a small bowl and mix them until smooth and creamy. If needed, add a teaspoon of water.
  • Pour dressing over salad and toss to combine.

NOTES

  • Feel free to add spices or more ingredients if you prefer. I am trying to avoid salt,
    this is why I haven’t added it.
  • If you have cherry tomatoes add them, it will give even better flavor to the salad.
