Carrot Cake Smoothie

This is one of those smoothies that is filling and will keep you full for several hours. All it takes is 5-6 minutes of your time, and there you have it. It’s super simple to make and take with you on the go.
This carrot cake smoothie contains all of the delicious flavors of carrot cake, as well as cozy spices like pumpkin spice, natural sweeteners from fruit, carrots, and maple syrup, and other simple ingredients high in nutrients. Putting carrots in a smoothie may sound strange, but trust me when I say it’s delicious! Our Carrot Cake Smoothie is 100% vegan, gluten-free, and dairy-free.

INGREDIENTS
- 1 large ripe banana
- 1/2 medium sized zucchini (chopped)
- 2 medium sized carrots (chopped)
- 1 teaspoon creamy peanut butter
- 1 tablespoon flax seeds
- 4 tablespoons coconut yogurt
- 1/2 medium small avocado
- 1 tablespoon coconut flakes
- about 1/2 teaspoon pumpkin spice (or per teste)
- 1 teaspoon maple syrup (optional)
- 1/2 cup (120 ml) coconut milk – or any other dairy-free milk
TOPPING (OPTIONAL)
- coconut yogurt (per taste)
- chopped walnuts (per taste)
- cinnamon (per taste)
INSTRUCTIONS
- Blend all smoothie ingredients in a blender until smooth and creamy. Experiment with the amount of liquid when adding non-dairy milk until you reach the desired consistency. We prefer smoothies that are thicker.
- Pour everything into a jar or a glass. Garnish with some coconut yogurt, cinnamon, and chopped walnuts.
- Enjoy your Carrot Cake Smoothie! Use frozen bananas and zucchini if you like super refreshing smoothie.
