Carrot Energy Balls

Did you know that carrots can be used in desserts? They can be used cooked or raw in so many sweet treats. Today we have for you Carrot Energy Balls recipe, super delicious, crunchy, and soft. They are perfect as a post workout snack, kids friendly, and packed with all the nutrients.

Carrots have always been my favorite raw veggie ever since I was a kid. When my mother was cooking soups or stews I was always expecting an extra carrot peeled for me as a snack. I could eat them only raw, she had to either remove the cooked carrots from my plate or I would leave them behind. I’m not very proud of this but it was like that for a long time :).

Carrot Energy Balls
For getting the best texture, follow our instructions bellow. It is very important that you process all the ingredients separately, that way not chunks are going to be formed. This is even more important if you don’t have high speed food processor!

Vegan Carrot Balls
Prep time: 15 min   Cook time: 15 min   Total: 30 min   Servings: 10




 

 

INGREDIENTS

  • 3 medium size carrots (about 150 g)
  • 15 medium size Medjool dates (pitted)
  • 1/2 cup (75 g) roasted almonds
  • 1 cup (115 g) walnuts
  • 3 tablespoons shredded coconut + extra for coating
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger powder
  • about 1/8  teaspoon clove powder

INSTRUCTIONS

  • Roughly chop carrots and add them to a food processor. Process on high until broken down into small bits. Transfer into a large mixing bowl.
  • Add almonds and walnuts to a food processor and process until finely ground. Transfer to the mixing bowl with carrots.
  • Use soft Medjool dates, remove pits, and add them to a food processor and process on high until date paste is formed. Transfer to the mixing bowl and add all the rest of the ingredients. Using spatula still all ingredients until evenly combined.  
  • Form mixture into balls and repeat until no dough remains. Roll each ball into shredded coconut! Let them cool for at least 1 hour in fridge.
  • Serve and enjoy Carrot Energy Balls the way you like!

NOTES

  • We got 20 Carrot Energy Balls from this mixture.
