Chickpeas Salad with Cherry Tomatoes

Protein salads are very nutritious and full of flavor. Chickpeas Salad with Cherry Tomatoes became our go-to salad last couple of days. Although we prefer to cook our own dried chickpeas, sometimes we don’t have time to do so. When that happens we usually buy organic jarred chickpeas from a local store.

This refreshing salad can be adapted to meet your needs. For the protein source we used chickpeas, some other good alternatives are lentils or beans. We used light green bell pepper, you can use regular red pepper or maybe some other vegetable instead.

The best thing about salads is that they are so easy to make and no cooking skills are required.
Cherry Tomatoes Salad
Chickpeas Salad with Cherry Tomatoes is great for meal prep. It can last up to 5 days in the fridge. Besides that it’s a great salad to pack or take with you on a picnic, it travels very well and won’t go bad.

Chickpeas Salad

INGREDIENTS

  • 1 bell pepper
  • 10 cherry tomatoes
  • 5 tablespoons cooked chickpeas
  • 1/2 red onion
  • 1/2 cup parsley

DRESSING

  • 1 tablespoon of flaxseed oil
  • juice of a half a lemon
  • pinch of salt

INSTRUCTIONS

  • Prepare all the ingredients. We use jarred chickpeas, but if you have time you can cook your own chickpeas. Cup bell pepper and cherry tomatoes into bite-size pieces. Chop the red onion and parsley.
  • To make the dressing add all the dressing ingredients into a small bowl and mix them until combined. Set aside.
  • In a large bowl add all the salad ingredients. Pour dressing over it. Toss everything together until combined.
