Chocolate Almond Energy Bars

This is so far our favorite snack / dessert recipe on the website. It has it all! The bars are perfectly sweetened, coated in delicious 70% cocoa dark chocolate, have crunchiness from the quinoa puffs and roasted almonds, and smell like cinnamon!
The recipe is plant-based, 100% vegan, gluten-free, and dairy-free! These bars are naturally packed with protein, which is essential after a workout. They will keep for at least a month in a fridge which is perfect if you like to do a meal prep!

INGREDIENTS
- 1 cup (125 g) almond flour
- 1/3 cup (30 g) ground rolled oats
- 2/3 cup (25 g) quinoa puffs
- 1/4 cup (about 60 g) room temperature + 7 tablespoons (99 g) of chilled (not frozen) almond butter
- 2 cups (about 300g) 70% cocoa dark chocolate
- 1 teaspoon ground cinnamon
- 1/5 cup (about 65 g) of maple syrup (or other liquid sweetener)
- 1/4 cup (about 30 g) of chopped roasted almonds
INSTRUCTIONS
- In a large mixing bowl add almond flour, ground rolled oats, almond butter (1/4 cup), cinnamon, and maple syrup. Stir everything well, then add quinoa puffs, and using your hands mix everything until evenly combined.
- Line a small baking try with a parchment paper and pop the mixture. Use a spatula or your hands to flatten the mixture. Try to create as smooth surface as possible. Let it cool in the freezer for faster results for 30 minutes. When cooled enough, remove slab from tray, cut into bars.
- On top of each bar add chopped roasted almonds and add chilled (not frozen) almond butter a less then a tablespoon (7 tablespoon is for 8 bars). Don’t use runny almond butter because it will fall from the bar. Return into a freezer for at least 1 hour.
- In the meantime melt the chocolate using a double boiler. Remove the bars from the freezer and one at a time, completely dip each bar in melted chocolate using a fork. Let excess chocolate drip off and place onto baking paper or cooling rack. Since the bars are frozen, the chocolate will be firm in about 5 minutes. But if it isn’t for some reason let it sit in a fridge (not freezer) for about 15 minutes.
