Edamame & Chickpea Hummus Recipe

Happy New Year Everyone! This is our first recipe for this year and we prepared something special for you. As you already know, we love hummus so much, it’s our favorite vegan spread / dip ever! Recently, we had chance to finally buy some edamame beans, and the first thing that came to our mind was to make a hummus –  Edamame & Chickpea Hummus Recipe.
Edamame Chickpea Homemade Hummus

For those of you who don’t know, edamame beans are immature soybeans. They are great source of protein, antioxidants, healthy fiber, and vitamin K. However be careful when you buy edamame, it has to be non GMO and organic!




 

This is our own creation of a hummus using only the ingredients that will make this dip creamy, cheesy, nutritious, and amazingly delicious! The hummus can be stored in the airtight container for 5 to 6 days. As all our hummus recipes, this one is also vegan, gluten-free, and dairy-free.

Edamame Hummus Recipe

INGREDIENTS

  • 2/3 cup (about 100 g) cooked edamame beans
  • 1/2 cup (85 g) cooked chickpeas
  • 3 tablespoons Tahini
  • juice of half a lemon
  • 1/2 teaspoon garlic powder (or one fresh garlic clove)
  • 1 tablespoon nutritional yeast
  • pinch of salt
  • 1 tablespoon extra virgin olive oil

INSTRUCTIONS

  • For this recipe you’ll need cooked chickpeas (here are the instructions on how to cook them) and cooked edamame beans.
  • How to cook edamame beans: Process is very simple. All you have to do is to bring the water to boil, add edamame beans, and cook for 3-5 minutes until they become bright green!
  • When chickpeas and edamame are cooked let them cool at a room temperature.
  • Add all the ingredients into a food processor blend for about 1 minute or a bit more until smooth. If the mixture is too dry or you want creamier consistency, you can add 1 teaspoon of Tahini or olive oil or water.
  • Transfer the mixture to a prepared jar or another dish. Let it sit in a fridge for at least one hour. Garnish with some edamame beans on top.
