Lemon Poppy Seed Energy Balls

These energy balls are super soft, packed with healthy nutrients, and are irresistibly good. No baking is involved, all you have to do is mix all the ingredients and you’ll have yourself a perfect snack. They are great for hot summer days if served chilled. 
Lemon Poppy Seed Energy Balls
Our Lemon Poppy Seed Energy Balls are 100% vegan, gluten-free, and dairy-free. Even they contain lemon juice they are not sour or too overpowering. We added a perfect amount of dates to sweetened them up. For this recipe we used almond four, ground cashews, and coconut flour – a perfect combination!

Lemon Poppy Seed Energy Bites

INGREDIENTS

  • 14 Medjool dates (pitted)
  • 7 oz (200 g) almond flour
  • 6 oz (170 g) raw cashews (ground)
  • 2 tablespoon coconut flour
  • juice of 1 lemon
  • 1 teaspoon lemon zest
  • 3 tablespoons poppy seeds
  • 1 teaspoon of water (optional)

INSTRUCTIONS

  • Add dates into a food processor together with lemon juice and process on high until date paste is formed. Set aside.
  • In a large bowl add all dry ingredients and stir until combined. Then add date paste and using a spatula stir everything until dough is formed. If the dough is too dry you can add one teaspoon of water.  
  • Form mixture into balls and repeat until no dough remains. Let them cool for at least 1 hour in fridge. Have in mind that these are soft texture balls do don’t make them too dry!
  • Serve and enjoy Lemon Poppy Seed Energy Balls the way you like!
