Mozzarella Egg Muffins

On today’s menu, we have a very simple, oil-free vegetarian muffins. Mozzarella Egg Muffins are a great way to break a habit and start having eggs in a completely different way. Yup, you can make muffins just from eggs and some random vegetables that you have in the fridge.

This recipe is perfect for beginners, it’s very simple and easy to make, also it doesn’t require a lot of time. Vegetable combinations are endless! We used red bell paprika and carrot in this case. Since Darko loves cheese, we added mozzarella bites on top of each and the result is amazing. We love these muffins.

Egg Muffins

INGREDIENTS

  • 5 eggs
  • 1 medium red bell pepper
  • 1 large carrot
  • 10 small mozzarella balls (bite-size)
  • pinch of salt
  • pinch of pepper

INSTRUCTIONS

  • Preheat the oven to 350°F (180°C). Prepare the silicone muffin baking pan (if you are using non-silicone pan then grease it with coconut oil or other vegetable oil) and set aside.
  • In a bowl whisk the eggs, for about a minute, until the mixture is completely smooth.
  • Prepare the vegetables by chopping red bell pepper into small pieces, and shredding the carrot. Add them in a medium-size bowl, mix, and transfer evenly among the muffin cups.  
  • Divide the egg mixture evenly on top of the vegetables (1 egg per muffin). Then add 1 small mozzarella on top of each muffin.
  • Bake for about 15-20 minutes. 
  • Let it cool completely before removing them from a pan (this is how it works for silicone pan, without any oil added).
  • Enjoy your Mozzarella Egg Muffins!

NOTES

  • We got exactly 5 muffins.
