No Bake Peanut Butter Cups

Hello Everyone! Today, we prepared a perfect dessert for all peanut butter fans! No Bake Peanut Butter Cups are the most satisfying cups we’ve ever made. They are gluten-free, vegan, and so healthy!

For this recipe we used just basic ingredients. Both layers contain peanut butter. These cups have amazingly soft texture. We recommend you keeping them in fridge especially in the summer.

If you don’t have silicone muffin tray you can use a square pan and form bars instead of the cups. Recipe is simple, perfect for beginners, no special cooking skills are required. Most of all it doesn’t require any baking!

Vegan Peanut Cups

INGREDIENTS (for the Peanut Butter Base)

  • 1 1/2 cup coconut flour
  • 1 cup almond flour
  • 2/3 cup liquid sweetener like honey, maple syrup, etc. We used honey
  • 1 cup pure peanut butter
  • about 1/3 cup unsalted roasted peanuts

INGREDIENTS (for the Chocolate Topping)

  • 1 cup (175 g) semi-sweet dark chocolate
  • 3 teaspoons peanut butter
  • 1 teaspoon coconut oil

INSTRUCTIONS

  • Peanut Butter Base: Add coconut and almond flour, peanut butter and liquid sweetener of your choice into a large bowl. Stir well with spatula until the dough start to form, then use your hands to evenly combine the ingredients.
  • Use any baking dish or a mold you like. We decided to use a silicone muffin tray to form a nice looking “cups”. Fill each cup, but not entirely, leave a little space for the chocolate topping. Gently press the dough across each cup. When done, add 5-6 peanuts on the top of each cup, but press them into the dough. Let the cups cool in the fridge for at least 10 minutes.
  • Chocolate topping: Prepare a double boiler. Add the topping ingredients into a bowl and put the bowl over a pot with boiling water (double boiler) until it’s completely melted. Stir well. Pour the chocolate topping over the peanut butter layer. Refrigerate for at least 1 hour. Keep in fridge while not eating.
  • Serve and enjoy No Bake Peanut Butter Cups the way you like!

NOTES

  • These cups are very satisfying, 1 cup is enough as a serving.
  • We got 12 No Bake Peanut Butter Cups from this mixture.
