Pineapple Coconut Chia Pudding

After a short break, we are continuing with our chia pudding series. If you haven’t seen our chia pudding recipes, which I doubt :), you can find all of them here. Now let’s talk a bit more about our new, I like to call it exotic, chia pudding. I promise you that this Pineapple Coconut Chia Pudding recipe is unlike all the others you’ll find on the web. It’s absolutely amazing!

Pineapples are one of the most delicious fruits out there. My main concern, while creating this recipe, was how to create a perfect, thick enough, pineapple smoothie mixture. I didn’t want to just blend the pineapples, I wanted a reacher taste as well. Coconut protein powder was a perfect choice! If you don’t have it use shredded/ground coconut instead. 
Pineapple Coconut Chia Pudding

Like all the other recipes in this series, this recipe is 100% vegan, gluten-free, and dairy-free. Perfect for vegans!
Delicious Vegan Chia Pudding
Prep time: 2 – 8 h   Cook time: 7 min   Total: 2 – 8 h 7 min   Servings: 1




 

 

INGREDIENTS

  • 2 tablespoons chia seeds
  • 1 teaspoon flaxseed meal
  • one cup fresh pineapples
  • 1 tablespoon coconut protein powder(or shredded coconut)
  • approx 5.1 fl oz (150 ml) of unsweetened non-dairy milk (I used oat milk) – 3.4 fl oz (100 ml) for chia pudding and 1.7 fl oz (50 ml) for the pineapple smoothie

TOPPING

  • coconut flakes
  • pistachios

INSTRUCTIONS

  • Chia Pudding: In a small mason jar (or a small glass) add chia seeds, flaxseed meal, and 3.4 fl oz (100ml) non-dairy milk. Stir together until combined. Tighten lid (or cover with plastic wrap). Place chia pudding in the fridge for at least 2 hours or overnight (better).
  • Thick Pineapple Smoothie: In a high-speed blender or food processor add pineapples, coconut protein (or shredded coconut), and oat milk 1.7fl oz (50ml) and blend on high until smooth.
  • After chia pudding has thickened for at least 2 hours add the pineapple-coconut smoothie mixture on top of it.
  • Before serving add coconut flakes and pistachios on top of the Pineapple Coconut chia pudding.
  • Enjoy your Pineapple Coconut Chia Pudding!

NOTES

  • This is a serving for one person. For the best results prepare the base of the pudding before going to sleep. Chia seeds are always softer and pudding is thicker and creamier the longer it stays in the fridge. Let it sit overnight and in the morning just blend pineapples and coconut and there you go!
