Summer Fruit Salad

Don’t know about you, but when the warm weather comes, our favorite dessert throughout a day is definitely a Summer Fruit Salad! It’s sweet enough, it’s refreshing, and has a lot of berries and other seasonal fruits we simply adore.

If you love maple syrup and lime, you’ll love this recipe! Use honey if you don’t have maple syrup or you are not a vegan, the taste is the same! For the best results, refrigerate the salad at least 30 minutes. We love to make it a couple of hours earlier, usually in the morning. The salad is even tastier the longer you let it soak in its natural juices.

The key to making THE BEST fruit salads lays always in ripe fruit. Only that way the salad is perfectly sweet. You can even skip the honey or maple syrup and add only lime. When it comes to ingredients, you’ll love this part :), there are no rules! Any fruit that you have on hand can be good for making a fruit salad.

Fruit Salad

INGREDIENTS

  • 1 small kiwi
  • 3 strawberries
  • 1 large apricot
  • 1.1 oz (30 g) blueberries
  • 0.7 oz (20 g) redcurrant
  • 1.1 oz (30 g) raspberries

DRESSING (Optional)

  • 1 teaspoon lime juice
  • 1/2 teaspoon maple syrup (or honey if not vegan)

INSTRUCTIONS

  • Prepare fruits by chopping it to bite size pieces. Add all fruit ingredients into a medium size bowl and set aside.
  • To make the dressing, add all dressing ingredients into a small bowl and mix them until combined. Pour dressing over the fruits. Toss everything to combine.
  • Refrigerate the salad for at least 30 minutes before serving. Enjoy your vegan Summer Fruit Salad!
