It’s a basic granola (vegan and gluten-free) with just a few ingredients – budget friendly – perfect for students.




 

Have you ever asked yourself: “Is Homemade Granola Worth the Effort?” I’m sure you have. Let me tell you why I stopped buying store-bought granola. Even though it’s cheaper to buy at supermarkets, here are my top 5 reasons why homemade granola is better:

  • No palm oil! Most of the store-bought granola have palm oil in it, and we all know how bad palm oil is for our health.
  • No refined sugar! I don’t like too sweet granola and my main problem with brought granola was always how sweet it can be. Not to mention why refined sugars should be avoided.
  • Rich in flavors! Let’s do one simple test. Try one teaspoon of each, homemade and store-bought granola, and tell me which one of those two had better and more flavorful taste. The answer is obvious.
  • Add only the ingredients you like! Even though there are so many varieties of granola on the market, you can never find one that 100% matches your taste. You can experiment with the ingredients and add all those nuts and dried fruit you like.
  • No preservatives or additives! Homemade granola can be stored for up to 2-3 weeks while store brought can last a year or more. Preservatives and additives help granola last longer.

PRO TIPS

  • Old-fashioned rolled oats are better to use than quick-cooking ones.
  • Choose the right fat. The best option is coconut oil!
  • Always add dried fruit after baking the granola.
  • Don’t burn your granola! Have in mind that as granola cools on the baking sheet, it starts to form clusters – this is the part where it becomes crispy. Don’t wait until it has completely browned to pull it out of the oven.

Budget Friendly Granola Recipe
Prep time: 5 min   Cook time: 20 min   Total: 25 min   Servings: 4




 

 

INGREDIENTS

  • 1 3/4 cup (160 g) whole rolled oats
  • 1/2 cup (75 g) raw hazelnuts, chopped
  • 1/2 teaspoon cinnamon
  • 1 1/2 tablespoon coconut oil (room temperature)
  • 2 tablespoons maple syrup (or honey if not a vegan)
  • 1/4 cup (30 g) dried goji berries

INSTRUCTIONS

  • Preheat the oven to 300 degrees Fahrenheit (150 °C). Line a large baking sheet with a parchment paper. Set aside.
  • In a large bowl mix together coconut oil, maple syrup (or honey), and cinnamon, until combined. NOTE: Add more maple syrup if you want sweeter granola, this one is mild-sweetened!
  • Add oats and chopped hazelnuts into the bowl with the wet ingredients. Use your clean hands to mix well and toss to coat. The mixture will be sticky.
  • Spread the mixture in a thin layer on a baking sheet. Bake for 20 minutes stirring halfway through. When done add dried goji berries and toss everything.
  • Let it cool completely before transferring in an airtight storage container. Store it for up to 2-3 weeks. Enjoy your Homemade Granola Recipe!
