The Best Cheesecake Recipe

This is definitely the best cheesecake recipe we have ever made! It’s so creamy, sweet and sour at the same time. We used blueberries, raspberries, and blackberries, but you can add any berry fruit you like.

INGREDIENTS – Crust

  • 10.6 oz (300g) finely ground graham crackers
  • 5 tablespoons milk
  • 6.3 oz (180g) unsalted butter

INGREDIENTS – White Layer

  • 15.9 oz (450g) full-fat soft cheese
  • 1 tablespoon vanilla sugar
  • 16.9 fl oz (500ml) whipping cream
  • 7.8 oz (220g) powder sugar

INGREDIENTS – Fruit Layer

  • 19.4 oz (550g) of any berry fruit (We used blueberries, raspberries, and blackberries)
  • 3.4 fl oz (100ml) water
  • 0.35 oz (10g) gelatin
  • 1.7 fl oz (50ml) water for gelatin
  • 4 tablespoons sugar

INSTRUCTIONS

  • Prepare 10” (26cm) round cake pan. Line it with the parchment paper and set aside.
  • In a small pot on a low heat melt the butter. Transfer it to a medium mixing bowl and add ground crackers and milk. Mix everything, use only your hands it’s easier until all crumbs are soaked. Tip the mixture into a prepared round pan and press with your hands until evenly incorporated.
  • Submerge the gelatine into a very small pot with water, and leave to soak and soften for about 5-6 minutes. Heat the gelatine until it’s completely melted, but don’t let it boil! Remove from the heat.
  • Into a medium pot add water, sugar, and fruit and cook for about 10 minutes. If you are using frozen fruit cook for 13 min. Remove from the heat and add gelatine and set aside to cool on a room temperature for 1 hr.
  • Meantime start preparing the white layer. In a large mixing bowl beat the whipping cream until it forms soft peaks. In the second bowl add soft cheese, vanilla sugar, and powdered sugar and mix until evenly combined. Add this mixture to the bowl with whipped cream and mix until smooth and creamy. Spread it evenly on top of the first layer of the cake.
  • When the fruit is cooled add it slowly on top of the second layer. Refrigerate overnight or for at least 6 hours.
