Broccoli Brussel Sprouts Tomato Rice Meal Salad
This amazing Broccoli Brussel Sprouts Tomato Rice Meal Salad with hummus dressing is a perfect lunch or dinner meal. I had some leftover rice and vegetables and I didn’t have much time to cook, so I decided to mix all that together with a hummus (I always have homemade hummus on hand). This is how I came up with this idea. 🙂
This Broccoli brussel sprouts tomato rice meal salad is 100% vegan, gluten-free, sugar-free, healthy, and most of all tasty! Perfect meal for everyone who needs a healthy and nutritious meal!

INGREDIENTS
- 3.5oz (100g) cooked rice
- 7 small steamed brussels sprouts
- 3 medium-size radishes
- 1 small tomato
- 1/3 cup (about 60g) of steamed broccoli
- 1/2 teaspoon of hemp hearts
DRESSING
- juice of 1/2 of a lemon
- 1 scoop of a homemade chickpea hummus
- 1 teaspoon of extra virgin olive oil
INSTRUCTIONS
- Add the cooked rice to a plate (bowl).
- Finely chop all the vegetables, add them on top of the rice and set aside.
- For the dressing, whisk together all the ingredients until emulsified and smooth.
- Pour dressing over the salad and toss to combine everything.
- Sprinkle the salad with hemp seeds.
