INGREDIENTS FOR BURGER PATTIES

  • 1 cup uncooked brown/green lentils
  • 3 cups of water
  • 1 large carrot (diced)
  • 1/2 medium-size red onion (diced)
  • 2/3 cup bread crumbs
  • 2/3 cup oat flour
  • 1 teaspoon soy sauce
  • 1/2 teaspoon salt
  • about teaspoon of olive oil + extra if frying the burgers
  • 1/2 teaspoon black pepper

INGREDIENTS FOR BURGERS

  • 7 burger buns
  • 2 large tomatoes (sliced)
  • 1 small purple onion (sliced)
  • 7 lettuce leaves – size of the bun
  • 7 slices of vegan cheese

INSTRUCTIONS

  • Add lentils, water, and salt into a pot and bring to boil. Cook on medium heat for about 45 minutes or until the no water remains.
  • While lentils are cooking, prepare a large mixing bowl and add bread crumbs and oat flour. Stir well and set aside.
  • In a large pan add olive oil, diced carrot, onion, and pepper. Cook on medium to low heat for about 5 minutes. When done, transfer it in the bowl with the dry ingredients (bread crumbs and lentils). Stir everything well and set aside.
  • When lentils are cooked, transfer 2/3 cooked lentils to the food processor and process several times until it becomes a puree. Then add the puree and 1/3 of the lentils that were not processed, to the bowl with the rest of the ingredients. Add a soy sauce, and stir until everything is combined. Use your hands to form patties. This mixture will give you 7 large patties (about 3”).
  • Burger patties can be fried with a little olive 2-3 minutes each side, or baked for about 15 minutes. Choose which option suits you the best. We pan-fried ours.
  • Serve and enjoy your Vegan Lentil Burgers!

NOTES

  • Don’t wait for lentil to cool down. This will make the patties dry, and you won’t be able to form them – they’ll fall apart.
  • If the mixture is too dry add 1 tablespoon of water.
  • If the mixture is too wet add 1 tablespoon of oat flour.
